- 1 kg de ternera limpia en dados.

- 2 Cebollas.

- 1 Jitomate (Tomate).

- 4 Dientes de ajo.

Elaboración

Cocción de la carne

En una cazuela colocamos la carne cortada en dados, ½ cebolla y 2 dientes de ajo. Cubrimos los ingredientes con agua y llevamos a ebullición hasta que se haga bien, sin llegar a deshacerse.

Elaboración del Adobo de Chili Ancho.

Si tenemos una cocina con fuego tatemamos (doramos) el chile directamente sin quemarse y retiramos. Si no, podemos hacerlo a la plancha con una sartén. Cuando tengamos el chile listo, procedemos a abrirlo y retiramos las semillas sin tocar las venas del chile. Posteriormente, lavamos el chile con agua.

Los doraremos bien hasta que estén listos. Observaremos algunas partes que se queman, pero no se preocupen, simplemente las cortaremos y ya estarán listas para moler.

En una licuadora ponemos los ingredientes que acabamos de dorar. Además de esto pondremos una pizca de canela, una pizca de sal, un poco de orégano y utilizaremos el mismo caldo de la carne que hemos cocido. También añadiremos el pan a remojo con vinagre que habíamos preparado anteriormente. Licuamos con poca agua para que se haga una pasta, no tiene que quedar muy líquido.

Cuando se termine de licuar, pondremos en una cazuela el adobo a refreírse (sin aceite). El mismo caldo que teníamos de la carne lo vamos vertiendo en la cazuela, sin que llegue a ser muy líquido. Colocamos la carne en el adobo y volvemos a hervir.

Hervimos las patatas baby y preparamos los frijoles refritos. Una vez estén listo, toca emplatar.

Colocamos la carne bañada con adobo generosamente, ponemos la guarnición de frijoles y las patatas. Podemos decorar los frijoles con unos totopos y después ponemos las flores comestibles.

Danny Herrera - Rancho la Gloria (Baja California)

Una de las leyendas más conocidas es que surge en un bar de Baja California ‘’Rancho la Gloria”. Marjorie King una reconocida actriz norteamericana solía frecuentar este bar, pero era alérgica a los alcoholes destilados, a excepción del tequila. El tequila solo no era una idea que le llamase la atención así que, Danny Herrera (dueño del local) decidió sorprender a Marjorie con un cóctel de tequila, jugo de limón y triple seco. Lo sirvió en una copa con el borde de sal y como no puede ser de otra manera, lo llamó Cóctel Margarita en honor a la actriz.

Carlos Orozco - Cantina Hussong (Baja California)

Otra versión popularmente conocida cuenta como Carlos Orozco, un bartender en la Cantina Hussong, crea el cóctel para la hija del embajador alemán, Margarita Henkel. El bartender estaba experimentando nuevas recetas y al ser ella la primera persona que probó el cóctel, decidió llamarlo Margarita.

Margaret Sames (Baja California)

La tercera versión es que la Margarita fue creada en Acapulco por Margaret Sames, una mujer de la alta sociedad de Dallas. En una de las fiestas en su casa de Acapulco, Margaret preparó este cóctel para sus invitados. Uno de ellos era Tommy Hilton, el dueño de los Hoteles Hilton que posteriormente lo incluyó en la carta de sus hoteles. Esta historia se dice que es incorrecta, ya que años antes, algunas marcas de tequila ya promocionaban este cóctel.

Rita Hayworth - Tijuana (Baja California)

La actriz Rita Hayworth que en realidad se llamaba Margarita Cansino, es otra de las leyendas a las que se atribuye el origen del Cóctel Margarita. Cuenta la historia que antes de ser una actriz mundialmente conocida, encandiló a un camarero de Tijuana que le hizo un cóctel con los ingredientes que ya sabemos, tequila, triple seco y zumo de lima, y lo llamó Margarita en su honor.

  • 50 ml de Tequila de su gusto, lo que recomendamos al menos es que sea 100% de Agave.
  • 25 ml de Cointreau (licor de naranja).
  • 12,5 ml de Zumo de lima.
  • Sal (preferiblemente que sea marina).
  • Hielos.
  • Hielo Frappe.
  • Para la decoración: Rodaja de lima cortada como una moneda.

Preparación de la copa

Ponemos en un plato de postre la sal marina y en el otro agua. Es recomendable no poner muchas cantidades en los platos, ya que no queremos que el borde de sal quede muy grueso, solo lo justo para que el filo se impregne. Primero humedecemos el filo total de la copa y a continuación lo colocamos encima de la sal. Para terminar hacemos un corte a la rodaja de lima y la colocamos en el borde.

Elaboración

Aquí viene lo bueno y, lo hemos visto en vivo y a todo color en Acapulquito.

Llenamos aproximadamente una cuarta parte de la copa de la Margarita con hielo frappe y en la coctelera llenamos al máximo de hielo de combinados, vertimos los ingredientes y agitamos verdaderamente con fuerza hasta que no aguantemos el frío de la coctelera, ahí es el momento de servir, algo que nos indica que está bien mezclado es que saldrá con cierta espuma al terminar de servir.
